Last minute grilled dishes for your barbecue


Planning a barbecue party can be overwhelming, especially if it’s your first time hosting. The most important step is to list the different dishes that you will cook on the grill to serve your guests. No worries – just remember that it’s ideal to go for recipes that are easy to prepare but will satisfy everyone – children and adults alike.

Grilled Zucchini with Cheese and Garlic

What do you need:

  • 3 pieces of zucchini

  • 2 garlic cloves, minced

  • 1/2 cup grated Parmesan

  • 3 tablespoons of butter, softened

  • 1 tablespoon of chopped parsley

Slice each zucchini in half (crosswise) then slice each half (lengthwise) into 3 slices. In a small bowl, combine the garlic, butter and parsley. Spread the mixture on both sides of each zucchini slice. Sprinkle cheese on one side of each slice and place slices cheese side up and across on a preheated grill. Cook over medium-high heat 6 to 8 minutes or until cheese has melted and zucchini are cooked through.

Grilled peanut butter chicken

What do you need:

  • 4 boneless, skinless chicken breast halves

  • 1 garlic clove, chopped

  • 2 tablespoons of low fat peanut butter

  • 1 tablespoon of lime juice

  • 2 teaspoons of soy sauce

  • 1/3 teaspoon curry powder

  • A pinch of ground cayenne pepper

Combine garlic, peanut butter, lime juice, soy sauce, curry powder and cayenne pepper in a medium bowl. Stir to combine the ingredients well. Place the chicken breast halves on a preheated grill and brush the top half with half the sauce. Cook over high heat for 6 to 8 minutes. Flip the chicken and brush with the remaining half of the sauce. Grill for another 6 to 8 minutes, until cooked through.

Grilled shrimp with butter and garlic

What do you need:

  • 1 kilogram of large shrimp, peeled and deveined

  • 1/4 cup olive oil

  • 6 tbsp unsalted butter

  • 2 tablespoons minced chives

  • 1 tablespoon minced shallots

  • 1 tablespoon minced garlic

  • 1/2 teaspoon of paprika

  • Salt and ground black pepper to taste

Combine olive oil, butter, chives, shallots, garlic, paprika, salt and pepper in a large bowl. Stir to combine the ingredients well. Place the shrimp in the bowl and toss to coat well with the marinade. Cover and refrigerate for at least 1 hour. When ready, remove from the marinade and cook on a preheated grill over high heat until cooked through and opaque, about 2 to 3 minutes.
