Grilled Chicken and Pesto Angel Hair Pasta

What do you need:

  • 2 boneless chicken breast halves, cooked and cut into bite-size pieces

  • 1 1/4 cups angel hair pasta

  • 2 garlic cloves, minced

  • 1 cup of pesto sauce

  • 2 tablespoons of olive oil

  • 2 tablespoons of roasted almonds

Cook pasta until al dente in a saucepan according to package directions. Heat olive oil in a large saucepan over medium-high heat. Cook the garlic until tender. Stir in the cooked chicken, cooked pasta and pesto. Garnish with almonds before serving.

What do you need:

  • 1 cup cooked salmon, crumbled into bite-size pieces

  • 1 cup linguine pasta, cooked al dente

In a saucepan, heat the olive oil and butter over medium-low heat then add the pepper and onion. Cook until tender, about 6 to 8 minutes. Add cream cheese and stir until melted. Stir in the salmon flakes and milk and simmer for 5 minutes or until cooked through. Place the pasta in a serving bowl and pour the salmon mixture over the pasta. Stir to coat. Garnish with lemon and dill slices.

Italian-style grilled shrimp pasta

What do you need:

  • 1/2 kilogram of shrimp, peeled and deveined

  • 3/4 kilogram of tomatoes, chopped

  • 20 fresh basil leaves, chopped

  • 2 cups angel hair pasta, cooked al dente

  • 2 cups grated Mozzarella cheese

  • 1 1/2 cup heavy whipping cream

  • 1 cup of grated Parmesan

  • 1/2 cup white wine

  • 2 tablespoons of butter

  • 2 tablespoons of extra virgin olive oil

  • 1 tablespoon minced garlic

  • 1 teaspoon Italian seasoning

  • Salt to taste

In a large frying pan, melt the butter then add the white wine. Bring to a boil. Stir in the heavy cream and Parmesan. Simmer 8 to 10 minutes until the mixture is reduced. Add the cooked pasta, tomatoes and mozzarella. Remove from heat and garnish with grilled shrimp before serving.
