Grilled Chicken and Pesto Angel Hair Pasta

What do you need:

  • 2 boneless chicken breast halves, cooked and cut into bite-size pieces

  • 1 1/4 cups angel hair pasta

  • 2 garlic cloves, minced

  • 1 cup of pesto sauce

  • 2 tablespoons of olive oil

  • 2 tablespoons of roasted almonds

Cook pasta until al dente in a saucepan according to package directions. Heat olive oil in a large saucepan over medium-high heat. Cook the garlic until tender. Stir in the cooked chicken, cooked pasta and pesto. Garnish with almonds before serving.

Grilled salmon linguine

What do you need:

  • 1 cup cooked salmon, crumbled into bite-size pieces

  • 1 cup linguine pasta, cooked al dente

  • 1/2 lemon, sliced

  • 1/2 cup chopped yellow bell pepper

  • 1/4 cup diced onion

  • 6 tablespoons of skimmed milk

  • 2 tablespoons of extra virgin olive oil

  • 2 tablespoons of butter

  • 1 tbsp low fat cream cheese

  • 1 teaspoon of chopped fresh dill

In a saucepan, heat the olive oil and butter over medium-low heat then add the pepper and onion. Cook until tender, about 6 to 8 minutes. Add cream cheese and stir until melted. Stir in the salmon flakes and milk and simmer for 5 minutes or until cooked through. Place the pasta in a serving bowl and pour the salmon mixture over the pasta. Stir to coat. Garnish with lemon and dill slices.

Italian-style grilled shrimp pasta

What do you need:

  • 1/2 kilogram of shrimp, peeled and deveined

  • 3/4 kilogram of tomatoes, chopped

  • 20 fresh basil leaves, chopped

  • 2 cups angel hair pasta, cooked al dente

  • 2 cups grated Mozzarella cheese

  • 1 1/2 cup heavy whipping cream

  • 1 cup of grated Parmesan

  • 1/2 cup white wine

  • 2 tablespoons of butter

  • 2 tablespoons of extra virgin olive oil

  • 1 tablespoon minced garlic

  • 1 teaspoon Italian seasoning

  • Salt to taste

In a small bowl, combine the basil, olive oil, garlic, Italian seasoning and salt. Mix until all the ingredients are well combined. Add the shrimp to the bowl and toss to coat. Cover and refrigerate 1 to 2 hours. Once ready, cook on a preheated grill over medium heat until cooked through, about 5 minutes. Remove from the heat and set aside. In a large frying pan, melt the butter then add the white wine. Bring to a boil. Stir in the heavy cream and Parmesan. Simmer 8 to 10 minutes until the mixture is reduced. Add the cooked pasta, tomatoes and mozzarella. Remove from heat and garnish with grilled shrimp before serving.
